"Saturnalia" San Benito County Cabernet Sauvignon

"Saturnalia" is a restrained and linear Cabernet Sauvignon that pays homage to its namesake—the ancient Roman festival honoring Saturn, the god of agriculture and time. This wine comes from the Tres Pinos Vineyard in the San Benito AVA and represents one of the last vintages from celebrated grape grower Ron Silletto. For decades, Silletto was a cornerstone of a region gaining recognition for its unique terroir and cool climate, influenced by the nearby Monterey Bay. Known for his dedication to viticulture, Silletto cultivated a reputation for producing exceptional grapes, particularly varietals like Cabernet Sauvignon, Merlot, and Pinot Noir, while also experimenting with lesser-known varieties. His meticulous farming practices ensured each harvest reflected the distinctive character of San Benito’s diverse soils.

For "Saturnalia," 1.5 tons of meticulously harvested Cabernet grapes underwent a thoughtful and natural fermentation. Destemmed whole berries were fermented in bins with indigenous yeast, allowing the wine to develop vibrancy and authenticity. Regular pump-overs facilitated the extraction of deep color and robust tannins, hallmarks of a well-structured Cabernet. The wine was aged in two neutral red oak barrels and two first-use barrels, imparting subtle complexity without overpowering its inherent qualities.

The name "Saturnalia" draws inspiration from the ancient Roman festival celebrated from December 17th to the 23rd, a time of feasting, role reversals, and communal revelry. During Saturnalia, social norms were turned on their head—slaves dined with masters, gifts were exchanged, and merriment abounded. This period of joyous liberation is beautifully captured in John Reinhard Weguelin's 1884 engraving, "The Roman Saturnalia," which depicts the spirited essence of the celebration.
